Floral and chocolatey notes tend to be trickier for me.

  • If your coffee tastes fruity, is it more like berries, citrus, or apples?
  • If it’s nutty, does it remind you of almonds or hazelnuts?

If you can’t narrow it down more, that’s fine. Try again with a different coffee or even another day with the same coffee. In many ways, coffee tasting is an art and you have to practice just like you would anything else.

 

3. Consider Aroma and Aftertaste

  • Aroma: Smell your coffee before tasting it. Many flavor notes are first detected through aroma.
  • Aftertaste: Pay attention to the flavors that linger after you’ve taken a sip. Does it leave a sweet, bitter, or smoky finish?

A lot of coffee tasters describe the mouthfeel too, and it’s something I’ve found myself focusing on more since starting this blog.

 

Mouthfeel, just like anything pallet-wise, is individual. But in general, I look at mouthfeel through the lens of smooth or gritty and then if it feels light or heavy in my mouth (kinda like how there is light chocolate and dark chocolate and you can taste the difference in those).

 

 

4. Practice Describing Acidity, Body, and Sweetness

  • Acidity: Is the coffee bright and tangy or more mellow and smooth?
  • Body: How does the coffee feel on your palate? Is it light, medium, or full-bodied?
  • Sweetness: Is it sugary like caramel, or more subtle like honey?

As you taste more and more coffee and focus on using the coffee tasting wheel you will notice that the basics as noted above in Step 1 lend themselves to these descriptors.

As I said earlier, you don’t need to be a coffee professional to start using the coffee tasting wheel. I think it’s a misconception about the coffee tasting wheel and that it is only for coffee professionals. 

 

In fact, since I’ve learned more about it and honed my pallet some in regards to different coffees, I think I’ve zeroed in more on what coffee I like.

This is helpful because it allows me to more accurately choose different roasts from a coffee roaster based on the flavor notes in their description. 

 

For example, I’ve discovered that earthy coffees can feel gritty and have a musty smell, which doesn’t always appeal to me. On the other hand, I’ve found that African coffees, with their floral, sweet, and fruity profiles, are exactly what I love.

 

 

With that in mind, here are a few simple ways to practice using the coffee tasting wheel at home:

  • Compare Coffees: Brew two different coffee origins side by side and note their differences using the wheel.
  • Taste Blindly: Have someone brew a cup for you without telling you the details. Try to identify the flavor notes and then check the tasting notes on the bag.
